Cocktail

A refined twist on the classic Greyhound, designed to embody a sense of sophistication befitting its name, The Barondale Greyhound. This recipe balances the tart brightness of grapefruit with subtle herbaceous and citrus notes, all anchored by smooth vodka.

 

Ingredients

  • 50ml (1⅔ oz) premium vodka

  • 75ml (2½ oz) freshly squeezed pink grapefruit juice

  • 15ml (½ oz) freshly squeezed lemon juice

  • 10ml (⅓ oz) honey–thyme syrup*

  • Pinch of fine sea salt

  • 2 dashes grapefruit or aromatic bitters (optional but recommended)

  • Grapefruit wedge or twist, and a fresh thyme sprig (for garnish)

 

Honey–thyme syrup: Combine equal parts honey and water (e.g., 50ml each) and a few sprigs of fresh thyme in a small saucepan. Heat gently, stirring until blended, then allow to cool and strain out the thyme.

Method

  1. Prepare the Rim (Optional)
    Rub a grapefruit wedge around the rim of a chilled rocks or highball glass, then lightly dip the rim into a shallow plate of fine sea salt.

  2. Mix the Cocktail
    Fill a cocktail shaker with ice and add the vodka, pink grapefruit juice, lemon juice, honey–thyme syrup, and a pinch of sea salt. If using bitters, add two dashes now.

  3. Shake and Strain
    Vigorously shake for 10–15 seconds, then strain into your prepared glass over fresh ice.

  4. Garnish
    Top with a fresh thyme sprig and a grapefruit wedge or twist for a final flourish.
